Granola Bars

Let your creativity flow with flavouring these sustaining pick me ups.
Nutrient dense, these tasty morsels are usually jam packed with nuts, iron rich dates and sometimes dark good quality chocolate.



Raw Granola Bumper Bars



Nuts 1 cup
cashews, almonds, brazil, pistachios


Seeds 1 cup 
pumpkin, sunflower, chia, flaxseed, hemp,
 buckwheat


Dried Fruit 1/4 cup 
cranberries, apricot, banana, sultanas, currents,
blueberries, cherries or freeze dried raspberries


Medjool dates 1 cup

Coconut 1 cup
the stringy kind


Nut Butter or Tahini 1/4 cup
*alternatively use organic coconut cream


Zest
of 1 large lemon or orange


Cold Pressed Coconut Oil
or Cacao Butter
3 tablespoons

Apple Cider Vinegar 1 tablespoon
from a glass bottle


Pink Himalayn Salt
just a pinch for your trace minerals



Blend all ingredients in the food processor until just combined & press into a loaf tin.
Set in the fridge for 1 hour.

Options:

Use 1/2 cup of oats and less nuts/seeds

Cocoa 1/2 cup for the chocolate lovers

Plant based protein powder - 1 scoop

Chocolate topping:

1/2 cup of cacao butter or cold pressed virgin coconut oil
1/2 cup cocoa
2 tablespoons of nut butter or tahini
1/4 cup of maple syrup or coconut nectar
or wait until the mixture has cooled down and use raw honey
(do not heat honey)
pinch of pink himalayan salt
1/2 teaspoon of apple cider vinegar


Melt the cacao butter or coconut oil in a saucepan over a very low heat.
Allow to cool before adding the rest of the ingredients.
Pour over the granola base and set in the fridge.

melt good quality dark dairy free chocolate



TIP: coconut oil has a melting point of approx. 23 degrees
so these would not transport well in warm weather.
Cacao butter is solid at room temperature.


Keep in the fridge for up to 6 days in an air tight container
